Effect of dietary sucrose in humans on blood uric acid, phosphorus, fructose, and lactic acid responses to a sucrose load

Controlled experimental diets with 30% of caloric content from starch or sucrose were given to 10 males and 9 females in a crossover design to investigate the possible relationship between dietary sucrose and degenerative diseases. Sucrose loads were administered 1 week before and during the last week of both 6-week dietary periods; blood samples were drawn before and 4 times after each sucrose load. It was found that subjects on the sucrose diet had significantly higher serum uric acid and lower blood fructose at all times. The type of carbohydrate did not affect concentrations of serum inorganic phosphorus or blood lactic acid.
