Correlation between the levels of nitrates and nitrites and the contents of potassium, calcium and magnesium in potato tubers

In tubers of 16 cultivars of consumable potatoes, cultivated in the Experimental Station of Varieties Appraisal at Wegrze near Cracow in years 1991-1992, the contents of potassium, calcium and magnesium as well as levels of nitrates and nitrites, were determined. Statistical analysis of results showed a significant effect of the year of cultivation and cultivar on the levels of nitrates and nitrites in tubers. A significant correlation between the levels of the studied compounds and the content of potassium in tubers was found; however, in the case of magnesium and calcium the correlation was statistically non-significant.
