Extra virgin coconut oil: Physio-chemical parameters in deterioration

The deterioration of locally produced cold extract extra virgin coconut oil (EVCO) for use in aromatherapy due to physio-chemical oxidation in the air at room temperature is a major problem in the shelf-life and quality of the product. This study examined the deterioration in some chemical as well as quality characteristics over a period of 1200 days after extraction (DAE) and sampling intervals (SI) for pH, peroxide value (PV) and refractive index (RI). The results indicated that the pH decreased in time [YpH=6037-0.9 SI-0.39-2 DAE]. The refractive index [Y(RI)=1.4+0.6-1 SI-1.6-4 ED] and peroxide values [Y(PV)=38.8-9.73 SI+ 0.9-1 ED] displayed a similar trend. There were no variations in colour, viscosity or odour with age. The results indicate that EVCO has good storage potential for up to three years. Research continues in the area of novel product development in the product as a natural carrier for the skin lightening agent curcuma.
