The literature reflects a divergence of opinion on the subject of the effect of rigor mortis and ageing on muscle collagen aggregation in food animals: there is little information concerning fish. The object of the present study, was to document the effect of rigor mortis and ageing in trout (Salmo irideus Gibb) on the physical and biochemical characteristics of muscle connective tissue and its main component, collagen.
