Theobromine and caffeine content of chocolate products

Theobromine and caffeine enters the diet in chocolate products. Theobromine and caffeine content of 22 samples of chocolate liquor, the starting material for chocolate products, averaged 1.22% and 0.21%, respectively, as analyzed by high performance liquid chromatography. Eight commercial cocoas contained an average of 1.89% theobromine and 0.21% caffeine. Theobromine and caffeine levels in 8 commercial sweet chocolates averaged 0.46% and 0.07%, respectively, and 0.15% and 0.02%, respectively, in 7 commercial milk chocolates. Analysis of 5 oz servings of 5 hot cocoa beverages and 8 oz servings of 4 brands of chocolate milk mixes indicated average levels of 65 and 58 mg theobromine, respectively, and 4 mg and 5 mg caffeine, respectively. Methylxanthine content varied widely in individual samples from each product category. For instance, the ratio of theobromine:caffeine in chocolate liquors ranged from 2.5:1-23.0:1. These values may be useful in planning diets for which the methylxanthine content is medically important.
