Dried fruits contain ballast substances that promote digestion. In particular, such important soluble substances as pectins. Researchers suggest that pectin has the ability to bind harmful substances in the body, such as lead and arsenic (heavy metal salts), and remove them from the body. During the drying process, most of the water is removed from the product, which increases the concentration of dry components and the product becomes suitable for long-term storage. Dried fruits are rich in vitamins, various trace elements and minerals, they almost completely retain all the benefits of fresh fruits. The proposed drier makes it possible to produced quality dry fruits without loosing their curative properties. Fig. 3, Ref. 4.
