Characterization of polysaccharide extracts recovered from different grape and winemaking products

Английский. One of the most important challenges of the oenological industry is the recovery and valorization of valuable compounds from grapes and grape by-products. Recent studies have focused on the obtention of phenolic compounds, but little attention has been paid to the extraction of grape polysaccharides, which could have a great potential as oenological products but also for their benefits to human health. This study aimed to recover polysaccharides from different grape and winemaking products and provide information about its composition. The results obtained with the white pomace and white lees revealed its potential to be exploited to obtain extracts rich in polysaccharides. White pomace revealed as a good source to obtain polysaccharides rich in arabinose and galactose (PRAG) and glucosyl polysaccharides. White lees showed a potential to be used to recover mannoproteins and glucans. Both extracts showed high polysaccharide purity (55.5% and 51.9%, respectively). Extracts rich in rhamnogalacturonan type II (RG-II) were obtained from a red wine (89.7% polysaccharide purity) and from the wash water used by the distillery after draining the distilled wine pomace (40.6% polysaccharide purity). Our results open new lines to obtain extracts with different polysaccharide composition, non-available in the market. Future studies are needed to evaluate their potential as stabilizing or finning agents and possible alternative solutions to traditional animal-origin protein fining agents.

Французский. L’un des défis les plus importants de l’industrie œnologique est la récupération et la valorisation des composés précieux à partir des raisins et des sous-produits du raisin. Des études récentes se sont concentrées sur l’obtention de composés phénoliques, mais peu d’attention a été accordée à l’extraction des polysaccharides du raisin, qui pourraient avoir un grand potentiel en tant que produits œnologiques mais aussi pour leurs bienfaits pour la santé humaine. Cette étude visait à récupérer les polysaccharides de différents produits de raisin et de vinification et à fournir des informations sur sa composition. Les résultats obtenus avec le marc blanc et les lies blanches ont révélé son potentiel à exploiter pour obtenir des extraits riches en polysaccharides. Le grignon blanc s’est révélé être une bonne source pour obtenir des polysaccharides riches en arabinose et galactose (PRAG) et en polysaccharides de glucosyle. Les lies blanches ont montré un potentiel à utiliser pour récupérer les mannoprotéines et les glucanes. Les deux extraits ont montré une grande pureté polysaccharidique (55,5% et 51,9%, respectivement). Des extraits riches en rhamnogalacturonan de type II (RG-II) ont été obtenus à partir d’un vin rouge (pureté polysaccharidique de 89,7%) et de l’eau de lavage utilisée par la distillerie après drainage du marc de vin distillé (pureté de polysaccharide de 40,6%). Nos résultats ouvrent de nouvelles lignes pour obtenir des extraits de composition polysaccharidique différente, non disponibles sur le marché. Des études futures sont nécessaires pour évaluer leur potentiel en tant qu’agents stabilisants ou d’enlèvement des nageoires et les solutions alternatives possibles aux agents traditionnels de collage de protéines d’origine animale.
