Lead Content in Foods of Plant and Animal Origin

Lead is a heavy metal, which exhibits toxic and numerous other harmful effects on the human body. Lead enters the human body through natural and anthropogenic sources. In nature, lead is predominantly represented chemically bound with other chemical elements, but in the event of a disturbed balance, lead from natural sources becomes easily accessible to plants in the soil, and then easily enters the body of animals and humans through the food chain. Lead enters the body of plants, animals and people more and more often from anthropogenic sources. Namely, due to uncontrolled dumping of industrial waste, atmospheric pollution due to increased frequency of traffic and industrial activity, as well as uncontrolled application of chemical agents in agriculture, lead is increasingly present in the environment and living organisms. Therefore, eating foods of plant and animal origin is also one of the increasingly frequent and significant sources of contamination of the human body with this very harmful chemical element. Therefore, it is important tocontinuously monitor the content of lead in food. Therefore, research was conducted on the content of lead in plant material and in foods of plant and animal origin, the results of which are presented in this scientific paper.
