Aplicação de diferentes bioadsorventes no tratamento de água para a fabricação de cerveja artesanal | Application of different bioadsorvents in the water treatment for the manufacture of artisanal beer

The quality of the water used in the production of beverages is extremely important, as it directly influences the final sensorial characteristics of the product, especially in beer. One of the treatments used to improve the physical-chemical and microbiological quality of water is the adsorption operation. In the literature are reported several studies on the treatment of brew water, as well as the use of agroindustrial residues for the production of bioadsorvents for the treatment of water. The objective of this work was to evaluate the performance of different bioadhesives derived from agroindustrial residues in the adsorption of minerals (chlorides, iron, manganese, free residual chlorine) and organic compounds (hardness, alkalinity and acidity). The results were submitted to analysis of variance (ANOVA) and the means were compared by the Tukey test (α = 0.05). According to ANOVA, there was a significant reduction (p <0.05) in the alkalinity, pH and chlorides content after the adsorption process, while an increase (p <0.05) in the acidity results was observed. Thus, it can be demonstrated that the use of bioadsorbents for the treatment of water is an alternative able to reduce the alkalinity and the chloride content in drinking water, thus being a promising material to be used in the adsorption processes. The bioadhesive produced from orange peel was the most efficient for the treatment of drinking water.

A qualidade da água utilizada na produção de bebidas é de extrema importância, pois influencia diretamente nas características sensoriais finais do produto, em especial, na cerveja. Um dos tratamentos empregados para a melhoria da qualidade físico-química e microbiológica da água é a operação de adsorção. Na literatura são reportados diversos estudos sobre o tratamento da água cervejeira, bem como a utilização de resíduos agroindustriais para a produção de bioadsorventes para o tratamento de água. O objetivo do presente trabalho foi avaliar o desempenho de diferentes bioadsorventes derivados de resíduos agroindustriais na adsorção de minerais (cloretos, ferro, manganês, cloro residual livre) e compostos orgânicos (dureza, alcalinidade e acidez) presentes em água utilizada na produção de cerveja artesanal. Os resultados foram submetidos à análise de variância (ANOVA) e as médias comparadas pelo teste de Tukey (α=0,05). De acordo com a ANOVA, após o processo adsortivo houve uma redução significativa (p<0,05) no conteúdo de alcalinidade, pH e cloretos, enquanto foi observado um aumento (p<0,05) nos resultados da acidez. Com isso, pode-se comprovar que a utilização de bioadsorventes para o tratamento da água é uma alternativa capaz de reduzir a alcalinidade e o teor de cloreto em água potável, sendo assim um material promissor a ser empregado nos processos adsortivos. O bioadsorvente produzido a partir de casca de laranja foi o mais eficiente para o tratamento da água potável.
