Análisis del estatus sanitario, de las plantas de beneficio animal ubicadas en el departamento de Santander, según el Decreto 1500 de 2007

The purpose of this feasible investigation project was to analyze, from the safety perspective of the meat products derived from cattle, pigs and birds obtained from slaughterhouses. This work comes from the design of its infrastructure, technology, supervision of operative processes and the existence of systems for handling quality, safety and bromatological good practices. To achieve such a quality level, the government has proposed to reinforce the requirements that should be accomplished through the decree 1500 of 2007 and resolutions 240 and 242 of 2013, which has the objective of obtaining hazard free and high quality products (Rueda & Marín, 2020). Once the decree 1500 of 2007 got into effect, a census, or inscription, for slaughterhouses was realized on 2008, during the above mentioned inscription were counted 1627 establishments in operative state through all country, from which 512 are currently operatives as follows, cattle 175, birds 106, pigs 56, mixed (cattle and pigs) 14, conditioners 67 depost, 74 despair and 20 for other species. Numbers for Santander do not exceed 24 plants, being related to different species. This situation confirms the abandonment of surveillance, which still requires significant attention and control over its operations (INVIMA, 2019). After checking the current situation of slaughterhouses in Santander, Colombia, it is possible to deduce that, despite the monitoring made by INVIMA in operative establishments, the analysis for the current state of the sanitary status of the department is unknown according decree 1500 of 2007
