Utilización de la fibra de cascarilla de cacao en la industria alimentaria.

Durante los últimos años se ha puesto de manifiesto el incremento del interés de la industria hacia los posibles usos y beneficios de la fibra dietética (FD), el objetivo del trabajo fue realizar una revisión bibliográfica acerca de la utilización de la fibra de cascarilla de cacao en la industria alimentaria, haciendo énfasis en las propiedades nutricionales que tiene este residuo agroindustrial proveniente de las industrias cacaoteras. Para el desarrollo de la investigación se hizo la búsqueda a través de páginas web digitales como Google académico dentro de los cuales se revisaron normas, artículos, tesis, trabajos doctorales y de titulación referentes al tema, se tomó información actualizada basándose en documentos que en su mayoría tienen cinco años desde su última publicación. En cuanto al análisis de los resultados se hizo promedios de la fibra dietética de la cascarilla de cacao, fundamentándose en la caracterización físico química por distintos autores, se obtuvo un contenido de fibra (35,41%), y en harina de cascarilla de cacao (49,55%), productos a base de la harina de cascarilla de cacao como infusiones (13,85%), bebidas lácteas (2,20 %), productos de repostería (13,12 %), de acuerdo al perfil de minerales destaca el alto contenido de potasio (18905,38 ppm), en lo que respecta a la característica microbiológica y sensorial este ingrediente funcional es apto para el consumo humano, por lo tanto se concluye que la cascarilla de cacao evidentemente posee fibra, ha sido reportado especialmente por favorecer el funcionamiento digestivo, siendo un alimento prometedor en la industria alimentaria con la elaboración de distintos productos y al no contener gluten es posible utilizarlo en la dieta dirigida a personas del sector vulnerable celiaco, en efecto ayuda a la calidad de vida de la población potenciando la funcionalidad en la alimentación humana y disminuyendo el impacto ambiental.

During the last years, the increasing interest of the industry towards the possible uses and benefits of dietary fiber (DF) has been revealed. The objective of this paper was to carry out a bibliographic review about the use of cocoa husk fiber in the food industry emphasizing the nutritional properties of this agro-industrial residue from the cocoa industries. For the development of this study, a search was made through digital web pages such as academic Google, within which norms, articles, theses, doctoral and degree papers related to the subject were reviewed. Updated information was taken from documents that, in their most, have five years since their last publication. Regarding the analysis of the results, averages of the dietary fiber of the cocoa husk were made based on the physical-chemical characterization carried out by different authors and a fiber content was obtained (35.41%), and in cocoa shell flour (49.55%), products based on cocoa husk flour such as infusions (13.85%), dairy drinks (2.20%), pastry products (13.12%). According to the profile of minerals, it is highlighted the high content of potassium (18,905.38 ppm), with respect to the microbiological and sensory characteristics. This functional ingredient is suitable for human consumption, therefore it is concluded that the cocoa husk evidently has fiber, it has been Reported especially for promoting digestive functioning, being a promising food in the food industry with the production of different products and as it does not contain gluten, it is possible to use it in the diet aimed at people from the vulnerable celiac sector. In effect, it helps to the quality of life of the population by enhancing functionality in human nutrition and reducing the environmental impact.
