Avaliação do perfil em ácidos gordos trans da carne bovina no mercado português

A composição de ácidos gordos (AG) da carne bovina é um aspeto que os consumidores consideram importante, e a carne de ruminantes tem sido criticada por razões nutricionais devido à sua contribuição para a ingestão total de ácidos gordos saturados (AGS), os quais estão associados à incidência de doenças metabólicas. O objetivo deste trabalho consistiu na caracterização do perfil dos AG, em particular AG trans, na carne de raças bovinas portuguesas ou produzidas e comercializadas em Portugal. As amostras de carne bovina certificadas e não certificadas, analisadas no estudo foram adquiridas nas superfícies comercias de Lisboa, e os lípidos foram extraídos usando o diclorometano e metanol, de seguida foi feita a transesterificação combinada e os AG na forma de ésteres metílicos foram analisados por cromatografia gasosa com deteção por ionização de chama. A análise estatística foi efetuada utilizando o programa SAS 9.4, através do modelo misto onde a origem da carne foi único fator fixo. Através dos resultados obtidos de carnes de bovino certificadas e não certificadas da região de Lisboa verificou-se que tanto o teor lipídico como a composição em AG são variáveis entre origens, e entre carnes da mesma origem. Os AGS foram os principais AG encontrados na carne de bovino seguida dos ácidos gordos monoinsaturados (AGMI) de configuração cis, ácidos gordos polinsaturados (AGPI) ómega-6 e AG trans. Às carnes dos Açores tiveram um perfil em AG mais benéfico à saúde humana no perfil em AG trans e AGPI ómega-3, teve baixo teor em 18:1trans-10 que as carnes Indiferenciadas ou Carnalentejana. Estas diferenças são influenciadas por fatores intrínsecos e extrínsecos do animal.

ABSTRACT - Evaluation of the trans fatty acid profile of beef on the Portuguese market - The fatty acid (FA) composition of beef is an aspect that consumers consider important, and ruminant meat has been criticised for nutritional reasons due to its contribution to the total intake of saturated fatty acids (SFA), which are associated with the incidence of metabolic diseases. The purpose of this work was to characterise the profile of FA, in particular trans fatty acids (TFA), in the meat of Portuguese beef breeds or produced and marketed in Portugal. The samples of certified and non-certified beef, analysed in the study were purchased from commercial surfaces in Lisbon, and the lipids were extracted using dichloromethane and methanol, then combined transesterification was carried out and the FA in the form of methyl esters were analysed by gas chromatography with flame ionisation detection. Statistical analysis was carried out using the SAS 9.4 program, through the mixed model where the origin of the meat was the only fixed factor. The results obtained from certified and non-certified beef from the Lisbon region showed that both the lipid content and the composition in FA are variable between origins, and between meats of the same origin. The main fatty acids found in beef were the SFA, followed by cis-configured monounsaturated fatty acids (MUFA), omega-6 polyunsaturated fatty acids (PUFA) and trans fatty acids (TFA). The Açores meats had a more beneficial profile for human health in terms of trans fatty acids (TFA) and omega-3 polyunsaturated fatty acids (PUFA) but had a lower content of 18:1 trans-10 than the undifferentiated meats or meat from Carnalentejo. These differences are influenced by intrinsic and extrinsic factors of the animal.
