Selection for lean meat quality has led to a decrease in total fat contents compromising on meat palatability. Preliminary studies showed higher total intramuscular fat content in autochthones Bisaro breed when compared to piglets of industrial breed. Analysis of intramuscular fatty acid profile of the semimembranosus/semitendinosus muscles showed that Bisaro piglets had a significantly lower content of saturated fatty acid and higher levels of unsaturated fatty acids. The monounsaturated fatty acid (C18:1) content was significantly higher than that in industrial breed. Further studies are required as the breeding of animals, beneficial to human health, is important.
