Qualidade de grãos de soja submetidos à secagem com lenha e ar natural e armazenados em bags de polipropileno | Quality evaluations of soybeanssubjected to drying with wood and natural air and stored in polypropylene bags

A crescente demanda mundial por alimentos faz da cultura da soja uma das principais fontes de proteína vegetal. A soja representa a principal commodity agrícola brasileira, sendo o Brasil o segundo maior produtor e o primeiro exportador mundial da oleaginosa. Com o propósito de avaliar os efeitos imediatos e latentes do processo de secagem, os grãos de soja foramsubmetidos à secagem com altas temperaturas (60 °C e 80 °C), utilizando lenha como combustível, com duas diferentes umidades (30e 75%). A secagem dos grãos empregando lenha como combustível, para aquecimento do ar, é ainda,muito utilizado no país. O tratamento com ar natural foi representado pela secagem estacionária, com ar não aquecido, na condição ambiente. A secagem foi conduzida no polode pós-colheita, na Estação Experimental Agronômica da Universidade Federal do Rio Grande do Sul, sendo os grãos de soja oriundos de lavoura da safra 2016/2017, os quais foram colhidos com umidade inicial de 17,5% em base úmida. Para realizar a avaliação dos efeitos latentes, os grãos de soja foram armazenados em bags do tipo ráfia (polipropileno), em local protegido de intempéries climáticas. O tempo de duração da armazenagem foide 6 meses. Durante a secagem com altas temperaturas, foram acompanhados o teor de água, temperatura da massa de grãos, temperatura do ar de secagem, bem como após a secagem, avaliou-se os custos financeiros da realização da secagem com altas temperaturas. As avaliações físicas (teor de água, massa específica, peso de mil grãos), a análise química (proteína bruta) e análises tecnológicas foram realizadas após a secagem e em intervalos de 2 meses. Conclui-se que: 1) Os maiores custos de secagem por tonelada de grãos é superior quando se utilizatemperatura de ar de secagem em 60°C e 2) Secagem comtemperatura de ar de secagem em 80 °C apresenta maior eficiência de trabalho, com menor tempo total de secagem, bem como maior eficiência econômica e 3) Secagem com ar natural preserva as características qualitativas e quantitativas dos grãos e 4) A proteína bruta é um constituinte químico muito afetado durante o processo de secagem com altas temperaturas.

The increasingglobal demand for food makes soybeans one of the main sources of vegetable protein. Soybeans represent the main Brazilian agricultural commodity, being Brazil the second largest producer and the world's leading exporter of that oil seed. In order to evaluate the immediate and hidden effects of the drying process, soybean grains were dried at high temperatures (60 °C or 80 °C) using firewood as fuel with two different moistures (30 and 75%). Grain drying using wood as fuel, for heating the air, is still widely used in the country. The control treatment was represented by stationary drying, using unheated air, atambient conditions. The grain drying was conducted at the postharvest unit atthe Agronomic Experimental Station of the Federal University of Rio Grande do Sul. Soybeansfrom the 2016/2017 season were harvestedat the field with initial the moisture content of 17.5% on a wet basis. To evaluate the latent effects,the soybean grains were stored in raffia bags (polypropylene) and keptin afacility protected from the weather. The storage time was 6 months. During the drying process at high temperatures were evaluated the moisture, grain temperature, drying air temperature. After the drying process, the financial costs of drying were evaluated as well. The physical evaluations (moisture, specific mass and weight of thousand grains), chemical analyzes(crude protein) and technological analyzes were performed after the drying processand at 2-month intervals. Based on this work, it was possible to conclude that: 1)The highest drying costs per ton of grain wasobservedwhenthedrying air temperature used was at60 °C; 2)The drying process usingair temperature of80 °Chadhigher working efficiency, with amore reduced total timeof drying and, as well, with better economic efficiency; 3)The drying process with natural air preserved the qualitative and quantitative characteristics of the grains and 4)Crude protein is the chemical constituent that is considerably affected during the drying process at high temperatures.
