Valorisation des variétés de dattes secondaires tunisiennes par l’application de traitement hydrothermique | Valorization of Tunisian secondary date varieties by hydrothermal treatments

Французский. Le fruit du palmier dattier (Phoenix dactylifera L.) est l'un des fruits les plus abondants dans le monde. Près de 2000 cultivars de palmier dattier sont connus, mais seulement certains d'entre eux sont évalués pour leur performance et leur qualité de fruit. Ce travail est une contribution à la valorisation des fruits de palmier dattier de variétés secondaires tunisiennes par l’étude des propriétés physico-chimiques et techno-fonctionnelles de leur fraction solide riche en fibre et de leur fraction liquide riche en phénol et sucre obtenu après prétraitements. La composition chimique des pulpes de dattes a montré une richesse en sucres solubles (60%), en lignine (23-27 %), en fibres (5-7 %). Le reste des composants était inférieur à 4%, avec de faibles quantités en matières grasses (0,3-0,5%) et en phénols (0,04 à 0,07%). En ce qui concerne la graine les résultats ont montré une richesse en matières grasses et en phénols (13 à 17% et 1 à 5%, respectivement). En raison de ces quantités importante des phénols, l'activité antiradicalaire des graines était beaucoup plus élevée (131 à 400 mmol Trolox / kg de poids sec) que celle de la chair (32-47 mmol Trolox / kg de poids sec). Pour l'utilisation totale de ces dattes, un prétraitement a été testé, les steam explosion (SET) et steam traitement (ST). Après l'application de plusieurs conditions de traitements à la vapeur, des concentrés de fibres de datte (CFD) valorisables ont été obtenus. Leurs recuperations étaient très similaires pour les différentes conditions de deux réacteurs (SET et ST). Seule la granulométrie a montré des différences, ce qui augmente la fraction avec une taille inférieure à 4 mm dans les traitements plus intenses (plus élevée dans SET qu'en ST). CFD était également marqué par une qualité nutritionnelle intéressante, riche en phénol (4-8%), en cellulose (12- 20%), en hemicellulose (5-22%), en protéine (9-14%) et en matière grasse (5-11%). Ces compositions varient selon les conditions de traitement. L’étude des propriétés fonctionnelles de CFD a montré une bonne capacité de rétention d’eau (CRE) (5,37 à 8,50 g d’eau/g de fibres sèches) et d’huile (CRH) (7,03 à 8,74g d’huile/ g de fibres sèches). Ils étaient également pourvus d’un bonne activité anti-radicalaire (230 à 580 mmol Trolox/kg CFD). Ces résultats ont été mis à profit d’une formulation alimentaire. Les CFD ont été incorporés dans des muffins à raison de 2,5 et 5%. L’ajout des CFD influence légèrement les caractéristiques technologiques des pâtes et augmente leurs propriétés antioxydantes par rapport à un témoin sans CFD. L’étude des caractéristiques sonsorielles ont montré qu’il n’y a pas de différences significatives entre le témoin et le muffin avec CFD. D’autre part, ce CFD est caractérisé par un rapport (FI/FS) élevé (19). Ainsi, dans un but d’enrichir CFD par les fibres solubles, un traitement enzymatique a été réalisé, afin de réduire le rapport (FI/FS) à une valeur proche de la plage optimal (1 a 2,3). Les différents résultats ont montré une augmentation des pourcentages des fibres solubles de 3 fois (1,8% a 6,3%), et le ratio FI / FS est reduit de 19 à 2,5. En outre, des gluco, manno- et xylooligosaccharides ont été identifiés, ces oligosaccharides considerés comme prébiotiques. Pour l'utilisation totale des dattes traitées thermiquement, il était également nécessaire d'étudier la phase liquide riche en phénols et en sucres. Le liquide obtenu a été caractérisé et sa capacité antioxydante déterminée. La concentration des phénols totaux a augmenté, par les traitements allant jusqu'à 5311 mg/kg de dattes fraîches, ainsi que leur activité anti-oxydante jusqu'à 62,5 mmol Trolox/kg de dattes fraîches. Enfin pour évaluer l'utilisation potentielle de l'extrait phénolique, une étude de ses propriétés antioxydantes sur la matrice lipophile, en utilisant des huiles végétales et de poisson, ainsi que son activité anti-microbienne a été déterminée. Les résultats ont montré une remarquable protection contre la peroxydation des huiles étudiées, en particulier pour l'huile de tournesol (augmentant quatre fois, la stabilité d’huile de tournesol), et une activité anti-microbienne élevée contre les souches bactériennes testées. Les traitements thermiques des variétés secondaires de dattes tunisiennes sont des technologies prometteuses pour leur revalorisation, l'obtention de deux extraits, l'un riche en fibres antioxydant (phase solide) et l'autre en phénols et les sucres (phase liquide), qui peuvent être facilement appliquées à l'industrie et incorporées dans la formulation d’aliments sains et nutritifs.

Английский. The fruit of the date palm (Phoenix dactylifera L.) is one of the most abundant fruits in the world. Nearly 2,000 cultivars of date palm are known, but only some of them are evaluated for their performance and their fruit quality. This work is a contribution to give value addition to date palm fruit (flesh and seed), from Tunisian secondary varieties, by studying physico-chemical and techno-functional properties of their heir solid fraction rich in fiber and their fraction liquid and rich in phenol and sugar, obtained after pretreatment. Date fleshes contained essentially 60 % total carbohydrates, 23-27 % lignin and 5-4 % dietary fibers. The rest of the components were lower than 4%, with remarkably low amounts of fat (0.3-0.5%) and phenols (0.04-0.07%). In contrast, the percentage of fat (13-17%) and phenols (1-5%) present in date seeds were of great interest. Due to these amounts of phenols, the antiradical activity of seeds was much higher (131-400 mmol TE/Kg dry weight) than that of the flesh (32-47 mmol TE/Kg dry weight). A pretreatment was tested for the total utilization of these dates. After applying several steam treatments condition, valuable dietary fiber concentrates have been obtained. Their recoveries were very similar for the different assays. Only its granulometry showed differences, increasing the fraction with size lower than 4 mm in more intense treatments. DFC had also a good nutritional quality, with high phenol (4-8%), cellulose (12-20%), hemicellulose (5-22%), protein (9-14%), fat (5-11%) and lignin (44-71%). Treatment conditions had higher influence than date variety in the chemical composition. Study of functional properties of these DFC revealed good water and oil retention capacities (5,37-8.50 g water/g DFC and 7,03-8.74 g oil/g DFC, respectively). Furthermore, DFC had also very high antiradical activity (230-580 mmols Trolox/ Kg FC). Thus, these DFC could be considered as a valuable source of antioxidant dietary fiber. The study of physicochemical characteristics showed that DFC had the highest potential to be used as a food ingredient. As an application, the DFC were incorporated in muffin formulations at levels of 2,5 and 5 %. The addition of DFC slightly influenced the technological characteristics of dough and increased their antioxidant properties compared to control. Study of sensory characteristics revealed that there are no significant differences between control and the muffin with DFC. The only concern about the use of this DFC is that its ratio between insoluble and soluble fiber (IF/SF) is very high, around 19, but the best physiological effects are obtained with ratios 1-2.3. For this reason an enzymatic digestion has been assayed in order to decrease this ratio. The different results have shown that, the amount of SF increased from 1.8% to 6.3%, and the ratio IF/SF changed from 19 to 2-3. Moreover, in addition to an increase in the antiradical activity the SF, gluco-, manno-, and xylo-oligosaccharides were identified, oligosaccharides which has been postulated as prebiotics. The study of the liquid phase, rich in soluble antioxidant (phenols), and sugars, was also necessary for the total utilization of the thermally treated dates. The obtained liquid fractions were characterized and their antioxidant capacity determined. The concentration of total phenols increased, by treatments up to 5311 mg/kg of fresh dates, and their antioxidant activity up to 62.5 mmol Trolox/kg of fresh date. Different phenolic extracts have been obtained from the liquid phase in order to used as a antioxidant in food or nutraceutical formulation. The date phenolic extract were fractionated chromatographically using adsorbent or ionic resins to determine the most active fractions. The phenolic profiles were determined for each fraction, yielding fractions with interesting antioxidant activities with EC50 values of up to 0.08 mg/L or values of TEAC of 0.67 mmol Trolox®/g of extract. In addition, the antioxidant properties on lipophilic matrix of the organic extracts of date were also determined, using vegetable and fish oils, as well as the antimicrobial activity. The result showed a remarkable protection against lipid oxidation in oils, increasing the stability of sunflower oil by Rancimat method by four-fold. In addition, some extracts with interesting antimicrobial effects.
