Farklı Kurutma Yöntemleriyle Elde Edilen Yoğurt Tozunun Depolanması ve Rekonstitüe Ayran Üretiminde Kullanımı | Storage of Yoghurt Powder Obtained by Different Drying Methods and Its Use in Reconstituted Ayran Production

Bu çalışmada; konveksiyonel ve liyofilize olmak üzere iki farklı yöntemle yoğurt tozu üretilmiştir. Elde edilen tozların yarısı toz olarak yarısı da rekonstitüe ayran üretimi için içerisine % 0.5 tuz eklenerek ağızları alüminyum varaklı 100 ml'lik plastik ayran ambalajlarında +4 ⁰C'de depolanmıştır. Depolamanın 1., 15., 30., 60. ve 90. günlerinde hem toz olarak hem de rekonstitüe ayran üretilerek fiziksel, kimyasal, mikrobiyolojik ve duyusal analizlere tabi tutulmuşlardır. Ayrıca 1. gün analizleri için rekonstitüe edilen ayranlar 15. güne kadar +4 ⁰C'de depolanıp ayranların rekonstitüe edildikten sonraki dayanım süresi ve göstermiş olduğu değişimler araştırılmıştır. 90 günlük depolama süresince liyofilize yöntem kullanılarak üretilen yoğurt tozunun fiziksel, kimyasal ve mikrobiyolojik özellikler açısından daha iyi sonuçlar verdiği ve rekonstitüe ayran olarak tüketiminde duyusal özelliklerinin daha çok beğenildiği ve tercih edilebilirliğinin daha yüksek olduğu görülmüştür. Ayran örnekleri rekonstitüe halde 15. güne kadar depolandığında ise hem konveksiyonel hem de liyofilize örneklerde pH değerinin düştüğü, asitlik ve serum ayrılması değerinin arttığı, duyusal özelliklerin azaldığı ve tat- aroma kayıplarının meydana geldiği tespit edilmiştir.Elde edilen tüm bulgulardan hareketle yoğurdun belirtilen şekillerde yoğurt tozuna dönüştürülmesi ve ayran üretimi için pratik bir şekilde ambalajlanması, uzun bir raf ömrüne sahip olması ve istenildiğinde aylar sonra bile rekonstitüe edilerek tüketiminin sağlanmasının mümkün olabileceği sonucuna ulaşılmıştır.

In this study; yoghurt powder was produced using the conventional and lyophilized methods. Half of the yoghurt powders were stored in plastic Ayran packages, with the addition of 0.5 % salt for reconstituted ayran production. The samples were analyzed as powder and reconstituted Ayran on the 1st, 15th, 30th, 60th, and 90th days. In addition, Ayran that was reconstitued on the 1st day was stored at +4 oC until the 15th day, and the changes following dilution were examined. It has been observed that lyophilized yogurt powder gives better results in terms of physical, chemical, and microbiological properties during 90 days of storage, and its sensory properties are more appreciated and preferable when consumed as reconstituted Ayran. When the Ayran samples were stored in reconstituted form until the 15 th day, it was found that the pH value of all samples decreased, serum separation and acidity increased, and sensory properties decreased. As a result, it has been concluded that it is possible to convert yogurt into yogurt powder in the specified ways, to pack it in a practical way for ayran production, to have a long shelf life, and to be reconstituted even after months if desired.
