Оцінка якісних характеристик плодової сировини у безвідходному ланцюгу її переробки за вмістом титрованих кислот | Quality characteristics evaluation of fruit raw materials in the waste-free chain of its processing by titrated acids content

UA: Визначено вплив абіотичних чинників на накопичення вмісту титрованих кислот у плодах черешні з метою формування безвідходного ланцюга використання плодової сировини. В умовах гуманітарного контексту та розбудови переробної та харчової галузі південного регіону у післявоєнний період питання набуло надзвичайної актуальності. Дослідження формування фонду титрованих кислот в плодах черешні модельних сортів проводили 12 років. Для дослідження були обрані плоди черешні 33 модельних сортів. Програмою досліджень передбачено виділити модельні сорти черешні трьох термінів достигання з високим показником титрованих кислот для подальшої збереженості їх якості та біологічною цінністю плодів для переробного циклу. В ході проведення експерименту визначено, що максимальні показники вмісту титрованих кислот від 0,53% до 1,00% відмічене у сортів «Валерій Чкалов», «Ділема», «Удівітельна». Оптимальні параметри цукрово-кислотного індексу визначено у 31 модельного сорту черешні всіх термінів достигання. Для всіх груп модельних сортів, незалежно від терміну достигання, домінуючий вплив на формування фонду титрованих кислот мали абіотичні умови, що склалися протягом років досліджень. /// EN: The influence of abiotic factors on the accumulation of titratable acids in sweet cherry fruits has been determined in order to form a waste-free chain of fruit raw materials use. In the context of the humanitarian context and the development of the processing and food industry in the southern region in the post-war period, the issue has become extremely relevant. The study of titratable acids in sweet cherry fruits of model varieties was carried out for 12 years. Sweet cherry fruits of 33 model varieties were selected for the study. The research programme provides for the selection of model sweet cherry varieties of three ripening periods with a high level of titratable acids for further preservation of their quality and biological value for the processing cycle. During the experiment, it was determined that the maximum titratable acids content from 0,53% to 1,00% was observed in the varieties “Valerii Chkalov”, “Dilema”, “Udivitelna”. The optimal parameters of sugar-acid index were determined in 31 model sweet cherry varieties of all ripening periods. For all groups of model varieties, regardless of the ripening period, the dominant influence on the formation of the titratable acid fund was exerted by abiotic conditions that developed during the years of research.
