For a long time mainly self-consumed by populations in constant mobility, camel milk is experiencing a sudden notoriety among a wider public (urban, western population) which explains its progressive entry into the market, including at international level. Such enthusiasm for camel milk is obviously linked to its dietary, even medicinal reputation. The challenge for producers and consumers today is to offer high quality and diversified products that match the tastes and food habits of the new consumers. Traditionally consumed raw or fermented, processing technologies have adapted to this raw material, enabling the production of cheese, ice cream and powder, even sweets and non-food products such as cosmetics. However, the peculiar behaviour of camel milk requires the continuation of sometimes very fundamental researches to understand its mechanisms.

Longtemps essentiellement autoconsommé par les populations en permanente mobilité, le lait de chamelle connait une soudaine notoriété auprès d'un public élargi (urbains, occidentaux) qui explique son entrée croissante dans les circuits marchands, y compris à l'échelle internationale. Un tel engouement pour le lait de chamelle est lié à sa réputation diététique, voire médicinale. L'enjeu pour les producteurs et les consommateurs est de proposer des produits de qualité et diversifiés pouvant correspondre aux goûts et habitudes alimentaires des nouveaux consommateurs. Les techniques de transformation se sont adaptées à cette matière première traditionnellement consommée crue ou fermentée, permettant la production de fromage, crème glacée et poudre, voire de sucreries ou cosmétiques. Toutefois, le comportement particulier du lait de chamelle nécessite la poursuite de travaux de recherche parfois très fondamentaux pour en comprendre les mécanismes.
