Fatty Acids and Their Sources in Human Diet in Modern Conditions

Lipids, proteins and carbohydrates represent macronutrients, which must be adequately represented in the diet, in terms of their quantity and quality. The physiological functions performed by lipids in the human body are numerous and very important, therefore it is extremely important to take care of their proper intake. Modern research is increasingly linking the fatty acid composition of the lipid fraction of foods with health status and with the occurrence of diseases in the modern age. It is necessary to limit the intake of fatty acids, and to reduce the content of saturated fatty acids in their structure, at the expense of unsaturated fatty acids. Polyunsaturated fatty acids, especially essential, n-6, linoleic and n-3, α linolenic fatty acids, are particularly important components of a proper diet, since the human body cannot produce them, and they must be ingested through food, in which these fatty acids must be represented in sufficient quantity, but also in the correct mutual relationship. Therefore, research was conducted on lipids and fatty acids in human nutrition in modern conditions, their source in nutrition, as well as their impact on the health status of the human body, and the results of the research are presented in this original scientific paper.
