Stabilisation du fromage de soja (Amonsoja) à travers l’amélioration de la technologie de transformation au Bénin

Description du sujet. Le fromage de soja (Amonsoja) est l’un des produits dérivés du soja très apprécié par la population béninoise. Du fait de sa teneur élevée en eau, il est difficile de le conserver pendant une longue période dans les conditions usuelles de stockage.Objectif. L’étude vise à stabiliser le fromage du soja (Amonsoja) à travers l’amélioration du procédé et l’équipement de transformation.Méthodes. Dix kg de graines de soja de la variétés TGX 1910-14F étaient traités pour produire du Amonsoja séché en utilisant quatre technologies de séchage : le séchage traditionnel (ST), le séchage avec le séchoir ATESTA (SAT), le séchage avec le séchoir à convection forcée (SCF) et le séchage avec le séchoir BOSCH (SB). Les analyses physico-chimiques, microbiologiques et sensorielles étaient effectuées sur les Amonsoja séché obtenus.Résultats. La durée de séchage avec SAT (6±0,5 heures) était significativement inférieure (p<0,05) à la durée de séchage du Amonsoja avec ST, SCF et SB. Aucune différence significative (p<0,05) n’a été observée pour le rendement du Amonsoja pour les quatre (4) modes de séchage. L’évaluation sensorielle a montré que Amonsoja séché avec SAT (60,00 %) et SCF (33,33 %) était le plus apprécié à cause de sa couleur attrayante et texture croustillante par rapport aux autres Amonsoja séchés. Les teneurs en eau, pH, l’acidité titrable, la teneur en cendres et en huile étaient respectivement en moyenne de 88,45±2,39 % ; 6,4±0,22 % ; 0,35±0,06 % ; 4,01±0,82 % et 25,93±3,77 %. Au plan microbiologique, Amonsoja séché avec le séchoir ATESTA permettait d’avoir des Amonsoja séchés de qualité sanitaire meilleure par rapport aux trois autres Amonsoja séchés.Conclusion. Le séchage de fromage de soja (Amonsoja) à l’aide du séchoir ATESTA peut être recommandé pour la transformation du soja en fromage. Subject Description. Soy cheese (Amonsoja) is one of the soy-derived products highly appreciated by the population of Benin. Due to its high-water content, it is challenging to preserve it for an extended period under usual storage conditions.Objective: The study aims to stabilize soy cheese (Amonsoja) through the improvement of the processing method and equipment.Methods. Ten kilograms of soybean seeds of the TGX 1910-14F variety were processed to produce dried Amonsoja using four drying technologies: traditional drying (ST), drying with the ATESTA dryer (SAT), forced convection drying (SCF), and drying with the BOSCH dryer (SB). Physicochemical, microbiological, and sensory analyses were conducted on the obtained dried Amonsoja.Results. The drying time with SAT (6±0.5 hours) was significantly shorter (p<0.05) than the drying time of Amonsoja with ST, SCF, and SB. No significant difference (p<0.05) was observed in the yield of Amonsoja for the four (4) drying methods. Sensory evaluation showed that Amonsoja dried with SAT (60.00%) and SCF (33.33%) was the most preferred due to its attractive color and crispy texture compared to the other dried Amonsoja. The average moisture content, pH, titratable acidity, ash content, and oil content were respectively 88.45±2.39%, 6.4±0.22%, 0.35±0.06%, 4.01±0.82%, and 25.93±3.77%. Microbiologically, Amonsoja dried with the ATESTA dryer resulted in dried Amonsoja with better sanitary quality compared to the other three dried Amonsoja.Conclusion. Drying soy cheese (Amonsoja) using the ATESTA dryer can be recommended for the transformation of soy into cheese.
