Some Chemical Characteristics of Sucuk and Salami Samples Available at Retail in Adana

The aim of this study was to investigate some chemical characteristics and residual nitrite and nitrate levels of sucuk and salami samples collected from retail outlets of major supermarkets in Adana province. A total of 36 sucuk samples (12 brands; 7 national and 5 local producers) and 30 salami samples (10 brands; Macar salamis) were purchased from local markets. Sucuk and salami samples were analyzed for pH value, moisture content, water activity and nitrite and nitrate contents. The average pH values of sucuk samples ranged between 4.69 and 6.56 indicating a higher variation while the average pH values of salami samples ranged between 6.05 and 6.43. Likewise, the average moisture contents of sucuk samples were between 33.56% and 46.78% whereas the average moisture contents of salami samples ranged between 62.09% and 67.91% indicating a relatively lower variation. Water activity values of the sucuk samples were between 0.932 and 0.861 while the average aw values of the salami samples ranged between 0.916 and 0.940. Among the sucuk samples analyzed in the present study mean nitrite and nitrate contents ranged from 58.65 mg/kg to 216.63 mg/kg and 34.86 mg/kg to 161.08 mg/kg, respectively. While relatively lower nitrite (14.30 mg/kg - 35.96 mg/kg) and no nitrate contents were observed in salami samples, the data indicated that a higher variation of both nitrite and nitrate contents were still present in sucuk samples in the local markets requiring more studies and inspections to lower the variation related to dietary exposure to nitrite and nitrite from these types of products.

Thirty castrated rams of Sudanese Desert sheep breed, Hammari ecotype at 1.5-2 years were divided into five groups each with six animals. The animals were weighed prior commencement of the trial (30+ 0.500 kg) and once every week for ninety days. They were vaccinated against diseases endemic to the study area, drenched with a broad spectrum anthelementic and ear-tagged to facilitate identification during treatments. The rams were individually penned provided with drinking and feeding troughs. Rumen liquor was taken for in vitro dry matter and organic matter digestibility. During the trial period, animals were diagnosed by palpation for phytobezoars. At the end of the experiment rams were slaughtered, the site of formation of ball-shaped bodies determined, size and weight were also determined. Data was analyzed via analysis of variance. The results indicated increased feed intake for the group that was on a ration free of Merremia emarginata and those consumed rations with the plant biomass at vegetative growth and at flowering stages. At early and late maturity stages, feed intake decreased and phytobezoars were formed. The bezoars differed in weight and size, where larger and heavier ones were retained from the rumen, medium irregular ones from omasum and small bezoars from the reticulum. It was concluded that M emarginata biomass could initiate phytobezoars' formation at seed formation stage or when it reached late maturity stage. Palpation showed presence of bezoars after continuous ingestion of feed containing the plant biomass. It was recommended that more studies be conducted to determine the minimal amount of the biomass under study to initiate phytobezoars' formation.

Çalışmanın amacı, Erzurum’da ikamet eden tüketicilerin menşe işaretli Karnavas Dut Pekmezi tüketim tercihleri ve satın alma modellerini etkileyen temel faktörlere dayalı bütünsel pazarlama stratejilerini belirlemektir. Çalışmanın ana materyali, Erzurum ilinde ikamet eden ve Karnavas Dut Pekmezi tüketen 401 hane halkı ile yapılan anket çalışmasından elde edilen birincil verilerden oluşmaktadır. Elde edilen verileri dikkate alarak; satın alma kararı üzerinde etkili olan ana faktörlerin belirlenmesinde Temel Bileşenler Analizi (PCA) ve tüketicilerin tüketim sıklıklarına göre grupların oluşturulmasında İki Aşamalı Kümeleme Analizi kullanılmıştır. Araştırma sonuçları; Karnavas Dut Pekmezi’ni yoğun ve ılımlı düzeyde tüketen kullanıcılar sırasıyla doğrudan pazarlama yaklaşımları altında kırsal kalkınmaya katkı sağlamak için menşe etiketli bütünsel kalite ve geleneksel üretim metotlarından sağlanan duyusal kalite niteliklerini dikkate alan yerel markalı genişletilmiş ve gerçek mamul imajlarının perakende seviyesinde konumlandırılmasının gerekliliğine işaret etmişlerdir. Diğer taraftan düşük düzeyde kullanıcılar ise, geleneksel üretim metotları ve hedonik kalite yaklaşımını uygulayan yerel markalı gerçek mamul imajları altında mamullerin konumlandırılması ve tutundurma karması ile yayılım etkisinin artacağı üzerine odaklanmışlardır. Bu yüzden her bir segmentteki kullanıcıların ihtiyaç ve istekleri dikkate alınarak, onların fayda beklentileri ile mamul imajlarına göre konumlandırma ve tutundurma stratejileri uygulanabilir.

In this study, a survey and data assessment has been made to clarify the status of olive oil mills which operate in Turkey. According to the study, there have been around 1000 commercial olive oil mills that mostly small and medium-sized and about 1 million tons of olives at these mills have been processed in our country seasonally and total maximum capacity of the olive oil mills was estimated to be about 5 million tons of olive oil. The average capacity utilization rate of the sector is also around 20%. About 71% of olive oil mills have three-phase decanter, 27% of them have two-phase decanter and 2% are operated as press extraction process. On the other hand, 78% of three -phase decanters used in olive oil mills can easily convert to 2-phase systems without loss of capacity and efficiency, but only 2% of them cannot be convert to two-phase systems. Approximately 89% of the olive oil mills are stored the olive oil mill wastewater in the evaporation lagoons.

Meat is one of the main nutrition source in the human diet with its excellent protein, vitamin and mineral contents. Despite its advantages, being high-priced makes meat products open to adulteration. Meat products are mixed food types which can contain different species of meat. However, mixing two or more types of meats is not always allowed by laws. On the other hand, replacement high quality meats with cheaper meat types are a cost lowering way for the producers. The commonly consumed meat types differ from country to country, but generally economical, ethnic and religion concerns are in the foreground. In this case, species identification techniques are gaining importance. Although some techniques depending on DNA or spectroscopy have been developed for many years, choosing the best method for species identification is still among the controversial issues today. Thus, the currently used methods and promising techniques in this area were discussed in this review.

The influence of farming type (conventional or organic) and production system (low-and high-input) on various quality characteristics of milk have been in the focus of studies over the last decade. The aim of this work was to evaluate the impact of different dairy management and production systems on carbon stable isotopes ratio (δ13C) and milk urea content. The samples of raw milk were collected each two weeks at certified organic high-input and low-input farms, conventional high-input and low-input farms in late indoor period and outdoor period. Data analysis showed clear difference between milk from organic high- and low-input farms with non-overlapping range between -22.90 ‰ and -24.70‰ for δ13С in protein fraction (equal 1.80‰) and between -25.90‰ and -28.20‰ (equal 2.30‰) for δ13С in fat fraction independently from season factor, as for Δδ13С (protein-fat) values in milk from high-input (1.50-3.00‰) and low-input (3.20-6.30‰) organic farms. Analysis of correlation between δ13С in protein fraction and milk urea content values showed that during late indoor period the most significant difference was detected between milk from organic low-input and conventional high-input farms (5.85‰ for δ13С in protein fraction and 4.65 mg/100 g of milk urea content). During outdoor period, the non-overlapping range was established for low-input and high-input organic farms (3.40‰ for δ13С in protein fraction and 10.77 mg/100 g of milk urea content). Results of δ13С values in fat and protein milk fractions, as combination of δ13С in protein fraction and milk urea content could be a potential tool for the distinguish of milk from different farming types, based on different feed composition.

Araştırma serbest sistem yumurta tavukçuluğunda kullanılacak uygun tavuk materyalini belirlemek üzere yürütülmüştür. Bu amaçla yerli kahverengi yumurtacı Atak-S genotipi ile YB kodu verilen yabancı kahverengi ticari yumurtacı genotip verim ve yumurta özellikleri bakımından karşılaştırılmıştır. Araştırmada her bir genotipten 150’şer adet olmak üzere toplam 300 adet tavuk kullanılmıştır. Her genotip kendi arasında üç parsele ayrılmış ve her parselde 50 tavuk barındırılmıştır. Derin altlıklı yer sistemli kümes içerisinde birim alanda (m2) 5 tavuk yetiştirilirken, otlatma alanında ise tavuk başına 4 m2 alan ayrılmıştır. Aynı gün kuluçka çıkışı yapılmış olan yarkalar 16 haftalık yaşta özel bir firmadan temin edilmiştir. Araştırma 80 haftalık yaşa kadar sürdürülmüş olup bu süre zarfında verim ve yumurta kalite özellikleri tespit edilmiştir. Bu özelliklerden, %50 yumurta verim yaşı, yumurta ağırlığı, tavuk-gün yumurta verimi, tavuk-kümes yumurta verimi, yaşama gücü, ak indeksi, sarı indeksi, haugh birimi ve sarı rengi bakımından genotipler arasında farklılık bulunmamıştır. Buna karşın, 18-80. hafta canlı ağırlığı, yem tüketimi, yemden yararlanma oranı, şekil indeksi, kabuk kalınlığı, kabuk direnci, et-kan lekesi oranı ve kabuk rengi bakımından ise genotipler arasındaki farklılığın önemli olduğu tespit edilmiştir. Araştırmada, genotiplerden herhangi birisinin bütün özellikler bakımından öne çıkmadığı belirlenmiştir. Ancak, piyasa şartları dikkate alınarak yapılan ekonomik analiz sonuçları ve hayvan hassasiyetleri bakımından yapılan gözlemler neticesinde Atak-S genotipinin serbest sistem yumurta tavukçuluğuna daha uygun olduğu sonucuna varılmıştır.

Nitrogen fixation resulting from mutual symbiosis of rhizobia and cultivated legume plants is therefore critical to food security as it directly affects agricultural production. Biological Nitrogen Fixation (BNF) can be an important factor in sustainable agriculture.The isolation and identification of different slow growing and fast growing rhizobial strains from the nodules of two leguminous plant species. Symbiotic nitrogen fixing Rhizobium spp. was isolated from (Lablab purpureus and Vigna sinensis). Nodules samples were collected from plants growing in different Districts of Bangladesh and the Glucose-Peptone Agar (GPA), Congo red, Yeast Mannitol Agar (YMA) containing 2% NaCl were employed to make presumptive decisions on the recognition and classification of the isolated bacterial strains. All the isolates were found with poor absorption of dye Congo red and little or no growth on the media of GPA and without altering the pH. Almost all of the isolates exhibit growth on 2% NaCl, poor growth on GPA, thus confirming the rhizobia. After biochemical tests like catalase test and citrate utilization test isolates were confirmed as Rhizobia. The presence of rhizobia on root nodules of leguminous Plant. Not only the leguminous Plant but also the rhizosphere contains rhizobia which help in soil fertilization.

Potato (Solanum tuberosum L.) has been remained an important agricultural crop in resolving global food issues through decades. The crop has experienced enormous growth in terms of production throughout the world in recent decades because of improvement in agricultural mechanization, fertilizers application and irrigation practices. Nevertheless, a significant proportion of this valuable crop is still vulnerable to losses due to prevalence of different viral, bacterial, fungal and nematodes infestations. Late blight, caused by Phytophthora infestans (Mont.) de Bary, is one of the most threatening pathogenic diseases which not only results in direct crop losses but also cause farmers to embrace huge monetary expenses for disease control and preventive measures. The disease is well known for notorious ‘Irish Famine’ which resulted in drop of Irish population by more than 20% as result of hunger and potato starvation. Globally, annual losses of crop and money spend on fungicides for late blight control exceeds one trillion US dollars. This paper reviews the significance of late blight of potato and controlling strategies adopted for minimizing yield losses incurred by this disease by the use of synthetic fungicides. Advantages and disadvantages of fungicides application are discussed.

In the study it is aimed to determine the stabilities of some agronomic traits of 10 different durum wheats over the years in conditions of Bursa. Research was carried out in randomized complete block design with three replications between the years of 2008-2013. Averages of genotypes of agronomic characteristics, Eberhart and Russell’s regression coefficient and deviation from regression, Francis and Kannenberg’s coefficient of variation and environmental variance used as stability parameters. When the results of the study evaluated at the stability analysis, Amb × Çak-30 lines were determined to be stable in most of the agronomic traits. As for grain yield, which is of great importance for the producer, breeding lines of Amb × Çak -26 and Amb × Çak-30 were determined in good harmony at Bursa under different climatic conditions over five years.
