Effect of Brine Calcium Concentration on the Surface Solubilization and Texture of Fresh Perline Mozzarella Cheese Полный текст

Softening of cheese surface is a common problem especially in brined cheeses. In this study, the effects of the brine calcium concentrations on the texture of fresh perline Mozzarella cheese were investigated. The compositions of cheeses were analyzed 2 weeks after production. Brine protein content were monitored at 2 and 4 week of storage. The effect of the brine calcium concentration on the texture and meltability of cheeses were monitored Texture Profile Analysis (TPA) and Schreiber meltability test at 2 and 4 weeks of storage. The decrease in brine calcium concentration increased the protein transfer from cheese to brine, leading to an increase in the moisture content of cheese. As the calcium concentration increased in brine, an increase in the hardness, and decrease in adhesiveness and meltability of the cheeses were observed during storage. In conclusion, softening/solubilization of the surface of fresh perline Mozzarella cheese can be prevented with increasing the brine calcium concentration.

To improve hen welfare, several studies have investigated various environmental enrichments that suit different laying hen production systems. The positive results of these studies can enable such environmental enrichments to be utilized in commercial laying hen production. This paper reviewed the effects of environmental enrichments in different laying hen production systems on hen welfare and egg quality. The successfully proven environmental enrichments in free-range production system include forage, shelterbelt, and artificial shade in outdoor area and novel objects and H-shaped perching structures in indoor. These are associated with increased range use that positively affects hen welfare. In aviary system, perches, and litter materials (e.g., straw, sand) as environmental enrichments are linked to improved behavioral expression, reduced stress, and enhanced immune system. Under the litter system, environmental enrichment with substrates (e.g., pecking stones, alfalfa blocks, silage, straw, barley) has been found to increase the foraging behavior of laying hens. This reduces severe feather pecking thus, improving the plumage condition of hens. Although the effects of environmental enrichments on hen welfare have been assessed and scientifically proven in the reviewed studies, significant progress of their impact on egg quality traits has not been reported. The studies have shown that environmental enrichments have no significant effect on egg quality traits. Also, appropriate pasture or plant species as environmental enrichments in free-range production system in relation to hen welfare and egg quality have not been identified. Therefore, it is important to continue studies on environmental enrichments while emphasizing their influence on egg quality since it is a major performance trait in the egg industry. In addition, there is a need for studies to identify ideal pasture or plant species for free-range production system that positively affects hen welfare and egg quality.

The aim of the study is to present a review about the "Wooden Breast Syndrome" (WBS) syndrome, which is a muscle disorder that has become increasingly important in recent years, and the etiology of the abnormalities caused by this myopathy, and its histological, macroscopic, and microscopic features. Besides, the effects on the visual, sensory, functional, mechanical quality and processing properties of the breast meat of broilers and their negative effects on the poultry industry were also discussed. Since this myopathy gives a hard structure to the pectolaris major muscle, it is called "Wooden Breast" in public. It is assumed that the leading direct and indirect causes of WB syndrome in broilers are pectoral muscle hypertrophy (volume increase in muscle cells), rapid growth rate, and high breast meat yield. Also, age, gender, diet, feed restriction, oxidative stress, genetics, etc. factors are also thought to be effective. However, the etiology of WB syndrome is still unclear in many aspects. As a result of the macroscopic examination of the wooden breast meat, a striking stiffness, swelling, viscous exudate (inflammatory fluid), petechial (purple-red bleeding spots) fluid, and a pale appearance in the pectoral major muscles are observed, and the lesions that occur can be detected by palpation. Due to these visual and sensory defects in breast meat, the consumability of meat decreases and this leads to significant economic losses for the poultry industry.

Proper personal hygiene is mandatory in pharmaceutical sector which will be helpful to control the quality of the products and minimize various types of filth that effects virtue of medicinal product. In pharmaceutical industry hygienic and safety measures are deliberated two utmost significant sights. To ensure the safety of workers, it is compulsory to fix practices of hygienic management and monitoring filth inside the biological and pharma laboratory as well as industry. This study will help to set an occupational health of the researchers, workers in laboratory by making intimation about the bad effects of personal hygiene and less protective management.

There are about 68 types of mulberry fruit with a wide ecological production area. Different mulberry species are grown in large fields in Turkey. Mulberries are largely dried-consumed, but sometimes they are used as fruit juice. In this study, black mulberry fruit was collected in two different ripening levels (semi-ripe and full-ripe) and oven-dried at 50, 60 and 70°C drying temperatures. Initial moisture contents of semi-ripe and full-ripe fruits were determined as 86.74% and 82.95%, respectively. Fruits were dried to have final moisture levels of 10-15%. Drying duration, drying models, effective diffusion, activation energy, specific energy consumption, color parameters and chemical properties of dried fruits were examined and the effect of ripening levels and drying temperatures were investigated. In terms of drying duration, while full-ripe fruits dried in a shorter time, effective diffusion, activation energy and specific energy consumption values were found to be higher than semi-ripe fruits. In terms of color parameters, semi-ripe fruits are recommended to be dried at 50 or 60°C drying temperatures and full-ripe fruits should be dried at 50°C drying temperature for better preservation of color parameters. On the other hand, a common proper drying temperature could not be identified for acidity (pH), water soluble dry matter and titratable acidity.

Spiders are one of the groups that best adapted to terrestrial life among in invertebrates and are represented by approximately 48,000 species in the world. Although all spiders do not weave webs, the webs of spiders are literally a work of art. The main reason for spider web weaving is hunting. Some spider species live in the nature dependent on the own web, while others continue to live without being dependent on the own web. Although basic taxonomic features generally remain unchanged, some spider-silk weaving apparatus may undergo adaptive variations. In this study, the web structure of the weaving web spider, Argiope bruennichi (Scopoli, 1772) and the structural organization of the web weaving apparatus was observed by using scanning electron microscopy (SEM). The web structure of A. bruennichi, spinnerets especially posterior spinneret and arrangement of its spigots are shown and discussed in the light of the literature.

Mushrooms contain a variety of secondary metabolites, including various phenolic compounds, which have been shown to act as excellent antioxidants. In this study, the contents of total phenolic, flavonoids and tannins of mushrooms methanolic extracts were evaluated by colorimetric assays to ranges of 277.36±0.66 to 420.86±0.90 mg (GAE)/100g DW; 31.99±0.90 to 90.90±0.07mg (QE)/100g DW and 150.61±0.16 to 220.47±1.01mg (TAE)/100g DW respectively. HPLC-profiles of methanolic extracts indicated that the individual phenolic compounds found to the samples of the species of mushrooms that are Lentinus squarrosulus and Auricularia politrich revealed us that gallic acid, catechin, acid ρ-hydroxybenzoїc, acid ellagique and naringerin were presented to the level of the two species. With respect to organic acids, the results showed that citric acid and fumaric acid was the major organic acid in all the samples of both mushrooms species. The methanolic extracts of the two mushrooms exhibited the high DPPH radical scavenging activities ranging from 34.10±1.12 to 58.95±0.52%. These data indicated that these mushrooms could constitute a potential good source of natural antioxidant for the local population.

In this study, testicular and ovarian structures of economically important edible Pelophylax ridibundus (Pallas, 1771) were histologically examined before and after reproduction in male and female individuals. Fourty eight (24 ♀, 24 ♂) adult frogs were collected from Gölbaşı Lake in Hatay. The average weight and length values of female frogs collected from nature were found to be 56.61±19.59 g and 79.54±7.07 mm; while, the average weight and length values of male frogs were 36.63±12.84 g and 69.29±9.15 mm, respectively. Frogs were brought to the frog farm established in Aydıncık and placed in breeding ponds with a width of 1m2. Frogs in the ponds were brought to the laboratory of Iskenderun Technical University in different periods, before breeding (March) and after breeding (June). Then, histological samples were taken from ovary and testis. The female frogs were determined ready for reproduction. Moreover, a large number of mature oocytes in the before breeding ovaries in vitellogenic stage, while after reproduction oocytes in primary structure and oocytes which have atresia status observed. Also, increase in the thickness of the theca layer was determined. In the male frog seminiferous tubules containing a large number of spermatogonia, spermatocyte, spermatid and a small number of spermatozoons including sperm bundles and leydig cells were found before reproduction. After the reproduciton, the density of spermatogonia, spermatocyte and spermatids were decreased; while, the density of spermatozoon and sperm bundle were increased in the seminiferous tubules. This study will contribute to the determination of mating and spawning in frog breeding by revealing the histological status of the gonad structure of P. ridibundus in the breeding process.
