The influence of technological peculiarities on fermented sausages’ quality and sensory properties

Fermentation is one of the ancient technological processes used in food production which influences the shelf-life of meat and meat products, also significantly affects the sensory properties like aroma and flavour. The objective of the present study was to evaluate the elaborated technology for a new fermented sausage production on the product quality and sensory properties. Sausages were produced by the standard technology using glucono-delta-lactone or starter culture. The drying of samples differs from 3 to 4 weeks at the same conditions; samples were dried for 4 weeks which produced with the starter culture, and 3 weeks which produced with glucono-delta-lactone. The sausages were tested at the end of the production, analysing pH, water activity, moisture and salt content, as well as the presence of Listeria monocytogenes, colony forming units of Listeria monocytogenes and Enterobacteriaceae in the sausage samples were analysed. The sensory evaluation was organised after getting Listeria monocytogenes testing results. The moisture content, water activity and salt content significantly differed (p is less than 0.05) among samples, no differences were established in pH, taste and flavour liking. The presence of Listeria monocytogenes was not established in samples which indicates that the producer properly applies a hurdle technology in fermented sausage production. Sensory evaluation results showed higher scores for texture and appearance in fermented sausages with glucono-delta-lactone. The study results confirmed that fermented sausages with glucono-delta-lactone during 3 weeks of drying can achieve corresponding safety criteria and sensory properties which are set for semidry fermented sausages.

In the market of the Latvia different wood surface coating materials suitable for use in outdoor conditions are offered, but available information on the efficiency of these against direct water exposure is insufficient. For structural timber building elements, such as glued laminated timber (GLT), the surface coating should be applied taking into account technological, visual or colour changes (ISO 7724:1984) and – last, but not least – economic aspects are considered. Wood surfaces coated with coating materials, such as varnishes, paints, etc. can stabilize some properties such as movement of moisture content, dimensional changes and attack by microorganisms and fungi. The changes in the moisture content of timber may influence such important parameters as mechanical properties and the total life time of the structural timber elements. A study has been conducted with the aim of assessing the efficiency of coating materials used for wood protection against water absorption. In this study, six different commercial coating products used for the treatment of spruce (Picea Abies L. Karst.) and pine (Pinus Sylvestris L.) samples were tested. The efficiency of different coating substances was assessed using two modified test methods according to the standards EN 382-2 (1994) and EN 927-5 (2006), determining the surface water absorption after immersion in water for 24 h and the dynamics of water absorption of the glued laminated timber for 696 h kept in water. As a result of the study, it has been ascertained that organic solvent-based commercial coating products are more efficient against short-term and long-term wood water absorption compared to oil-based coating materials.

Information and communication technologies are part of almost any branch of human lives. During the last decade also beekeeping joined the direction of application of IT tools and solutions and precision beekeeping was defined. Still in the beekeeping many operations and observations are completed manually, and there is a potential to switch to the digital realisation. Information technologies can be used in the beekeeping to partly support the beekeepers by implementation of automatic or semi-automatic solutions for bee colony remote monitoring, apiary record making and other actions. The aim of this paper is to make a summary of the usage of information technology tools by the beekeepers in Latvia, summarizing precision beekeeping development status and conclude about its future development potential. To achieve this aim, in cooperation with Latvian Beekeepers Association, a beekeepers survey was conducted. More than 200 beekeepers shared thoughts and opinions about their application of information and communication technologies for monitoring the bee colonies and apiary management. The summary of the survey conducted is described in this study.

The development of organic farming is determined by many factors. On the one hand, it is an increase in demand for food produced in this production system, on the other it is a subsidy system for organic farming under the CAP. The purpose of the article is a comparative analysis of the direction of changes in the development of organic farming in Poland and Latvia compared to the EU in the years 2000–2017. Information was analysed on the organic farming i.e. the area of organic crops, the number of certified farms and organic retail sales, based on FIBL data from the years 2000–2017. An analysis of the trend of changes in organic farming in Poland and Latvia indicates that the development of organic farming in both countries has clearly accelerated after their accession to the EU and after covering organic farming by the CAP support system. However, the case of Poland is definitely different from the trend of changes in organic farming in Latvia and in the EU, where both the number of organic farms and their area increased, with the simultaneous development of the organic food market. There are many indications that mistakes were made in the organic farming subsidy system.

The Internet of Things (IoT) is a computing concept that describes the idea of everyday physical objects being connected to the Internet and being able to identify themselves to other devices, and day by day it becomes popular in everyday life as well as in entrepreneurship. The IoT covers broad areas, including manufacturing, the health sector, agriculture, smart cities, security and emergencies among many others. The market for the industrial IoT is estimated to surpass 107 billion euros by 2021 and reach a compound annual growth rate of 7.3% as of 2020. The IoT makes an impact on all industries and provides benefits for various areas of business; however, business may be faced with some risks as well. The research aim is to analyse the benefits and risks of the IoT in entrepreneurship. The descriptive method, analysis and synthesis, the induction and deduction methods were used to achieve the aim. The research has revealed that the IoT can provide several opportunities for business in all fields of operations – marketing, logistics, accounting and human resource management. However, businesses may be faced with some challenges related to privacy and security, processing, analysis and management of data, as well as monitoring and sensing.

This paper investigates the effect of separated exhaust expansion chamber parameters on pressure oscillations in spark-ignited internal combustion (IC) gasoline engines. It is known that exhaust expansion chambers are becoming increasingly more popular among both – original equipment (OE) and aftermarket equipment (AE) exhaust system manufacturers for performance-oriented motorcycles equipped with mainly single cylinder engines, but the companies are reluctant to reveal any detailed principles of operation of the mentioned expansion chambers. The subject of this research is the type of expansion chamber (separate) as used on performance-oriented motorcycles, particularly its’ effect on exhaust pressure pulsations as different chamber volumes, locations and passage sizes are tested. Time-dependent computational fluid dynamics (CFD) analysis was carried out in Solidworks Flow Simulation environment on a simplified exhaust header pipe model imitating engine operation at full load and steady speed. Honda CRF450R motorcycle engine was used as the example and fully defined using a 1D engine performance calculator software to determine the combustion chamber pressure and exhaust valve lift at any given crankshaft position. Volume flow rate of exhaust gasses at the header pipe inlet was calculated based on engine parameters and operating speed. The average pressure values with respect to physical time were measured and graphed across the header pipe inlet cross-section. Eight different header pipe and exhaust expansion chamber combinations were modelled, tested, and results compared at low, medium and high engine speeds. It was found that the presence of exhaust expansion chamber tends to dampen the amplitude and decrease the frequency of pressure oscillations generated at the opening of the exhaust valve(s). Observations show that the addition of an expansion chamber as per design of performance-oriented motorcycles helps to decrease the negative effect of engine tuning while also dampening the positive effect.

The technical inspection of a building carried out by an expert in civil engineering can identify and classify the physical conditions of the real estate; this generates relevant information for the protection and safety of users. Given the real conditions of the property, and for the real estate valuation universe, using artificial intelligence and fuzzy logic, it is possible to obtain the market price associated with the physical conditions of the building. The objective of this experiment is to develop a property evaluation model using a civil engineering inspection form associated with artificial intelligence, and fuzzy logic, and also compare with market value to verify the applicability of this inspection form. Therefore, the methodology used is based on technical inspection of civil engineering regarding the state of conservation of properties according to the model used in Portugal and adapted to the reality of Latvia. Artificial intelligence is applied after obtaining data from that report. From this, association rules are obtained, which are used in the diffuse logic to obtain the price of the apartment per square meter, and for comparison with the market value. For this purpose, 48 samples of residential apartments located in the city of Jelgava in Latvia are used, with an inspection carried out from October to December 2019. The main result is the 9% error metric, which demonstrates the possibility of applying the method proposed in this experiment. Thus, for each apartment sample consulted, it resulted in the state of conservation and a market value associated.

An urgent problem is drying and processing of the wet dispersed waste, obtained in the production of food products, which can then be efficiently used as a fertiliser, for feeding livestock or as biofuel. A new design of a vibrating fluidised bed dryer has been developed, which, with low energy consumption, provides a pre-set productivity and the required final moisture content. The process of vertical oscillations of the body of a vibration dryer, together with the food waste contained in it, is analysed analytically, the necessary equivalent scheme is built, on the basis of which differential equations of the vertical oscillations of the body are compiled, their analytical solutions are obtained, and a numerical calculation is performed on a PC using the developed program.

Consumers are increasingly consuming sprouted seeds due to their low calories content, nutritional value, as well as beneficial effects on human health. Sprouts contain many bioactive compounds such as minerals, fibre, vitamin C, carotenoids and phenolic compounds. The aim of this study was to determine the effects of darkness, light and time total phenolic content and scavenging activity in alfalfa (Medicago sativa), radish (Raphanus sativus), broccoli (Brassica oleracea) and hemp (Cannabis sativa) seeds during germination. The seeds were washed, soaked in water by ratio of 2:1 (water : seeds) for 12±1 h and then germinated in light and dark conditions at a temperature of 22±2 °C and a relative humidity of 85±2% for different times (12, 24, 36 and 48 hours) in a climatic chamber ICH110 (Memmert, Germany). The quality changes of germinated seeds are determined by phenol content and scavenging activity. Un-germinated seeds were used as a control. The results of current studies show that after germination the highest increase in total phenols was in radish, broccoli and alfalfa seeds. The scavenging activity (SA) was higher after 48 hours of germination in all seed types compared to un-germinated seeds both in darkness and in light. This study shows that sprouted edible seeds are an excellent source of total phenolic compounds and has a high scavenging activity.

Remote and automatic monitoring of two Apis Cerana bee colonies was conducted in Indonesia to demonstrate precision beekeeping approach in that region. Successful implementation of the precision beekeeping system includes development of the bee colony monitoring hardware and software for data collection, analysis and visualisation. This paper focuses on development and installation of such systems at the private apiary in Indonesia. For bee colony monitoring at the apiary a developed monitoring unit was used, which is based on ESP microchip, and for the data storage SAMS data warehouse was used. The monitoring results showed that the choice of the location of the temperature sensor is important, as the temperature at the hive sides changes synchronously with the outside temperature. Also, feedback from the beekeeper is collected to further improve the system and monitoring process. This research is conducted within the SAMS – Smart Apiculture Management Services project, which is funded by the European Union within the H2020-ICT-39-2016-2017 call and with close collaboration with the local private beekeeper.
