[Some effects of thermic treatments on available lysine of sardine and bean proteins]

英语. In the present paper the results of a test carried out to verify the effects of thermic treatments on available lysine in sardine and bean proteins are given. The sardine samples were heated at temperatures of 50 deg, 100 deg, 150 deg. 200 deg C for increasing times from 7.5 min to 240 min; the bean samples were kept at temperatures of 100 deg, 150 deg, 200 deg C for the same times. For the sardines a constant increase of the available lysine was observed during the treatments at 50 deg C, while there was an increase at the initial times of heating at 100 deg, 150 deg, 200 deg C conditions and a decrease extending the treatment times. For the beans, on the contrary, the available lysine decreased from the beginning of heating. From the reported results it may be drawn that sardine proteins can stand thermic treatments for relatively long times without loss of available lysine, while it is different for bean proteins.

意大利语. In questo lavoro vengono riferiti i risultati di un esperimento condotto per verificare l'effetto dei trattamenti termici sulla lisina utilizzabile nelle proteine della sardina e dei fagioli. I campioni di sardina sono stati trattati a temperature variabili (50 deg, 100 deg, 150 deg, 200 deg C) per tempi variabili (7,5, 14, 30, 60, 120, 240 min), i campioni di fagioli a temperature variabili (100 deg, 150 deg, 200 deg C) per tempi variabili (7,5, 15, 30, 60, 120, 240 min). Per la sardina e stato osservato un costante aumento della lisina utilizzabile durante il trattamento a 50 deg C, mentre a 100 deg, 150 deg, 200 deg C si e notato un aumento nei primi periodi del riscaldamento ed una diminuzione prolungando la durata dei trattamenti. Per i fagioli, invece, fin dall'inizio del riscaldamento la lisina utilizzabile tende a diminuire. Dai risultati ottenuti si puo rilevare che le proteine della sardina possono sopportare i trattamenti termici anche per tempi relativamente lunghi senza perdita di lisina utilizzabile, al contrario di quanto accade per le proteine dei fagioli.
