Chemical isomerization of D-glucose D-fructose in date syrup (in Iraq)

Great interest has been directed toward production of fructose because of its chemical metabolic properties. Two major methods are known: enzymatic and chemical isomerization. In this study, in addition to the application of batch reactions under modified conditions freshly prepared sodium aluminate has been successfully used. It is fixed on suitable support surface such as silica gel and sand to form column reactors. The same technique was applied using anion exchange resins as support. Isomerization by this method will minimize alkaline degradation of the sugar. After finding the optimum conditions for the isomerization of glucose to fructose, the process was applied to date syrup to increase fructose content. A comparison of the data obtained for fructose concentration of the same sample by the three methods HPLC, Nuclear Magnetic Resonance spectrometric and polarimetric was found to have approximately similar value
