Changes of carbohydrates, proteins, RNA, and activity of hydrolytic enzymes of jujube seeds during germination

This experiment was to examine the metabolism of reserve substances and the activity of hydrolytic enzymes during seed germination of Chinese jujube (Zizyphus jujuba miller). There was a drastic decrease in globulin and glutelin within 12 hours after seeding with gradual decrease in albumin and prolamin after 24 hours. RNA contents were maintained at a constant level throughout germinating stages. The optimal activities were measured at pH 7, 8, 3, 5, 5, 3, and 6 in alpha-amylase, beta-amylase, invertase, cellulase, phosphates, protease and RNase, respectively
