Quality analysis of the rice germplasm of Bangladesh

Fine rices were found to possess more protein than the bold rices. Most of the high protein rices were of red pericarp. Amylose content was found to be negatively correlated with the protein content. Large variation for protein zone in the grain indicates that selection for deep seated protein bodies in the grain should get due importance. Amino acid analysis done on six highest protein content varieties indicated that pysme and tryptophan in those local varieties were much more than the high yield potential variety, IR8. A mutant IRATOM 38 had 25% more protein than the mother variety IR*. Boro rice genotypes has more protein than the Aus and Aman genotypes. Correlation studies done among all the quality characteristics, indicated that combination of high protein potential character with other desirable characters like high and good cooking quality may be possible
