The influence of water in maize grain during harvest up to drying on its quality was investigated. The maize samples for the analysis were taken from August 24th to September 30th 1983, during various maturity stages. On the basis of the obtained results the following conclusions were drawn: -Absorption spectrum of the cyclohexane extract can be used as a datum about the maize quality. The cyclohexane extract of physiologically mature maize did not show either absorption in the wavelength area of 400-500 nm, or increased absorption at 230 and 270 nm. The influence of moisture in physiologically immature grain increases absorption of the cyclohexane extract to 230 and 27 nm, indicating that such maize is of poorer quality. -Absorption spectrums of the cyclohexane extract of moist maize conserved with propionic acid or urea showed similarity with the spectrums of moist maize.
