Sweet potatoes grown at lower plant densities were rich in dry matter, vitamin C, glucose, starch and crude protein. Application of potassic fertilizer increased starch, glucose and crude protein of the tuberous roots. Increasing dose of nitrogen gave better quality roots. Storage led to a decrease in Vitamin C, starch and crude protein content but increase in dry matter and total glucose content
