Changes of some pigments [chlorophyll a and b; carotenoids] in the peel of Jonathan apples under different storage conditions

In apples from CS (cold store) conditions the destruction of pigments (chlorophyll a and b, carotenoids) occurred faster than in those from CA (controlled atmosphere store). Under conditions of CA high concentrations of carbon dioxide and low concentrations of oxygen were found the most beneficial for decreasing the rate of decomposition of skin pigments. An increase of chlorophyll content was observed in the first period of storage life during CA storage with a high concentration of carbon dioxide. Carotenoids examined were found to decrease during that time
