[Properties of the maize grain (the amino acid structure of the proteins)]

The amino acid structure of the proteins of the grain of the following maize hybrids; ZP-448, ZPSC-46 A, ZPSC-58 C, ZPSC-6, ZPSC-71 C, ZPSC-4 and ZPSC-74 o2 (opaque-2) was investigated. The following results were obtained: the grain of the standard hybrids has a low content of lysine, tryptophan and methionine and a high content of glutamic acid, leucine, proline and alanine. The grain of the opaque-2 hybrid has a higher content of lysine and tryptophan and a lower content of methionine and leucine relative to the standard hybrids. The amino acid content in the endosperm of all hybrids has a similar ratio to that in the grain, only their content is somewhat lower. The germ is rich in lysine and tryptophan and it is also characterized by the high content of glutamic acid, arginine and asparaginic acid. The opaque hybrid has a germ richer in all aminoacids than the germ of the standard hybrids. The germ of the standard hybrids is richer in all essential amino acids except leucine than the grain and endosperm and the opaque is richer in all amino acids except leucine. The husk is poor in all amino acids.
