The contents of protein components, amino acids, starch and tannin in the developing caryopsis of sorghum

Nine sorghum varieties were used to study the contents of protein components (albumin, globulin, glutelin, prolamin), lysine, tryptophane, starch, and tannin in the developing caryopsis of sorghum. It was found that the contents of albumin and globulin were comparatively low at different developmental stages, they amounted to 10-15% of the grain protein. Maximum accumulation of albumin and globulin occurred during the grouting and milk stage. The content of glutelin in the grain protein amounted to 20-30% at the maturing stage; The content of prolamin was comparatively high at different developmental stages of caryopsis and its accumulation was most active during the waxy and ripening stage. The content of lysine decreased with maturation of caryopsis, with the highest content in the grouting stage. The content of starch and amylose increased with maturation of caryopsis. The conent of amylopectin was the highest during the grouting and milk stage.
