The grain dry matter accumulation and moisture content of 12 winter wheat varieties belonging to different maturity groups were studied for two years from flowering to maturity. Under Martonvasar field conditions intensive dry matter accumulation took place until 34-37 days after flowering, during this time in a cool summer 80 per cent whereas under more unfavourable conditions 90 per cent of the final grain weight accumulated in the grains. The weather conditions have a significant effect on the final grain weight through the rate and duration of grain filling. The close significant correlation (r=0,907** - 0,966** ) between the two characteristics indicates that the time of maturity and harvest can be estimated reliably on the basis of the date of flowering. The difference between the dates of flowering of early and late varieties can decrease or increase by 2-3 days until maturity depending on weather conditions but the order of varieties belonging to different maturity groups does not change. The moisture content of the grains can be reliably judged by determining the water contents of the whole year.
