Effects of temperature on viability of sarcocysts of Sarcocystis cruzi in cardiac muscle of cattle

The experiments to investigate the effects of heating and freezing on the viability of sarcocysts of Sarcocystis cruzi in cardiac muscle of cattle were carried out. Freezing of S. cruzi infected bovine heart muscle at temperatures of -10deg C and -20deg C for 1 hr. 30 min., and at -5deg C for 17 hr. rendered Sarcocystis nonviable, but Sarcocystis infected bovine heart muscle survived storage for 11 days at 0 to 4deg C. Sarcocysts of S. cruzi in bovine heart muscle stored for 17 hr. at 40deg C were evaluated nonviable, and for 2 or 5 min. in water bath 60 or 100deg C were also non-viable. These results indicate that sarcocystis remains viable for long periods of time and that proper heating and freezing may be effective controls
