No influence of the nitrogen rates used on the reducing sugar content was found. The results indicate that the significant factors affecting the sugar content in tubers are varietal traits and environmental factors. However, the results of 5-year experimental series showed the negative influence of increasing nitrogen rates on the quality of fried products
