Differential integral analysis and dilatation measurement of fats for the sweets industry

The obtained results indicate that there is a possibility of substituting dilatometric analysis with differential integral thermal analysis in determining the content of solid triglycerides in these fats. The possibility of applying DTA or its integral modification for the identification of certain fats has also been determined, particulary when relatively simple thermal preparations of crystal modifications, which are equivalent to forms III or IV of cocoa butter, are used.
