The investigation was carried out into the results of storing fruits in contemporary and controlled conditions, chemical composition and biochemical changes which occur during storage of the most important autumn and winter varieties of apples and pears grown in Yugoslavia. The following parameters (fruit characteristics) were investigated: content of dry matter, total sugars, reduced sugars, saccharose, glucose, fructose, pectin substances, organic acids, mineral matters, the vitamin C, pH, hardness of fruits, the loss of weight (transpiration), organoleptic characteristics and quality.
