HPLC for process control in sugar factories

High performance liquid chromatography (HPLC) is well established as an analytical technique for sugars and other carbohydrates. In the sugar industry, HPLC has been frequently used for analysis of molasses, syrups and other low purity material, but less frequently for analysis of raw or refined sugars, or high purity materials, because techniques for their analysis require special detectors or post-column derivatization. This paper presents a new simple and rapid method for HPLC analysis of raw sugars and high purity syrups. Results are compared to these by the more established GLC techniques. Rapid HPLC analyses of cane juices and factory process juices and syrups are presented, and their applications are discussed. These rapid methods employ reverse phase columns, which do not separate invert into glucose and fructose, as do the ion-exchange type columns, but offer a rapid analysis for sucrose and reducing sugars.
