Food quality control in Uganda is discussed with special reference to the Uganda Grain Milling Company Limited. Production of high quality food is emphasized inorder to protect the consumers from buying contaminated food which can be a health hazard to both man and animals. Food contaminants such as pests and their remains, pesticide residues and mycotoxins etc are identified. Quality control methods currently in use at the Uganda Grain Milling Company Limited are discussed vis-a-vis the sophisticated methods in use in the developed world. The problems hampering quality control operations such as poor storage, unstable raw material supplies and lack of laboratory facilities are cited. The establishment of the Uganda Bureau of Standards is seen as an important development in ensuring food quality controls.
