[A contribution to the study of the biochemical properties of some more important wheat varieties in Timocka Krajina [Yugoslavia]]

This is an investigation on the content of mineral matter, starch, cellulose, pentosans, proteins and lipids in several varieties of winter wheat in the agroecological conditions of Timocka Krajina (Yugoslavia). The content of mineral matter ranged depending on the variety, the agroecological conditions of growing and the feeding regime. It was proportional to the level of wheat exploitation i.e., the percentage of wheat turned into flour. All of the studied varieties contained a favourable portion of mineral matter. The starch content was good and it ranged depending on the variety and the growing conditions. In the studied varieties, the presence of cellulose ranged from 1.98% to 3.04%. The lipid content ranged from 2.74% to 1.43%. The dynamics of the protein content depended on the variety and the agroecological conditions. The variety Beogradjanka was stressed in the study as a high-yielding and a high-quality variety. It has a good sedimentation value and a good content of total proteins.
