Titratable acidity of milk with respect to the metabolic profile of dairy cows

The objective of the present paper was to verify how titratable acidity of milk (TK) is influenced by the acid-base state of dairy cow organisms. Thirteen high-performance herds were investigated on farms in the South Bohemian region in practical farming conditions. The changes in the pH value of blood and acid-base excretion of urine within the physiological range were not reflected in titratable acidity. But if the base excretion increased above 250 mmol/l, there was a trend of titratable acidity decrease to the average value of 6.3+-0.6x2.5 mmol/l and of acid excretion increase to 7.8+-0.3x2.5 mmol/l. A decrease in the pH value of blood below 7.3 was related to a titratable acidity increase to 7.2x2.5 mmol/l, and on the other hand, an increase in the pH value of blood above 7.4 lead to a titratable acidity decrease to 6.4x2.5 mmol/l. A titratable acidity decrease below 6.2x2.5 mmol/l was influenced to the greatest extent by a decrease in the content of milk protein and by an increase in urea in milk. In the practical farming conditions the titratable acidity of milk, which is a result of polyfactorial effects, cannot be used for determination of the acid-base state of organisms.
