Contribution to the study of bacteriological flora in sardines (Clupea pilchardus)

The bacteriological flora in 35 samples of sardines fished in the Saronic gulf was studied. Also in the ground flesh produced, from these samples, before and during preservation in -18 deg C, after it was made in "fish fingers". There were no differences, for total bacteria, psychrophilic and coliform counts, in samples fished in different months during the year. Small decrease for total bacteria and psychrophilic counts and nearly complete annihilation of coliforms was observed after prefrying of the "fish fingers". Salmonella sp. was not detected E. coli and pathogenic staphylococci were found in two cases each, E. coli before and staphylococci after prefrying. Very small counts of sulphite-reducing clostridia were found in nine samples mainly before prefrying.
