Processing evaluation of highland-produced potatoes

Tuber samples of four varieties of highland-produced potatoes were submitted to a processing company in Manila [Philippines] for chips evaluation. A duplicate chip processing test was done at the pilot processing plant at the Albay Experiment Station. Biochemical analysis and sensory evaluation were also performed. Results consistently showed that ASN 69.1, Diamant and Berolina had better or equal processing qualities than Granola, the current variety used by the processing companies
