Characteristic of fatty acids found in the fat of pig stomach muscle tissue

It was found that the fat content of pig stomach muscle tissue constituted 3.07 percent. The chromatography of this fat revealed the presence of the following fatty acids: acetic, propionic, isobutyric, isovaleric, valeric and caproic. The fat present in the pig stomach meat tissue is high in such non-saturated fatty acids as palmitoleic, oleic, linoleic. On the other hand, the highest percentage of saturated fatty acids found in the pig stomach meat tissue was that of palmitic and stearic. The changes due to frozen storage prove that slight hydrolytic processes of the fat occurred in the experimental material. The ratio of non-saturated to saturated fatty acids decreases from 2.46 to 1.44 after 6 months' frozen storage
