Selected fermenters types (wooden pipe, PVC, gel plates, no carrier) with immobilized yeasts in the fermentation process of grape must were tested and evaluated. The course of the process is comparable with the classical fermentation. The release of cells from the biocatalysator, however, does not say for using those systems.
