Effect of heat hardening on soluble protein, superoxide dismutase (SOD) and membrane heat resistance in American grain amaranth seedling leaves

American grain amaranth has high resistance to for various unfavorable environments. The seedlings of grain amaranth were used to study on the changes of soluble protein content, superoxide dismutase (SOD) and its isoenzymes activity, as well as their relationship with the heat resistance of leaf cell membrane during heat hardening. The results indicated that the high heat stability of protein in the cell membrane might be responsible for the heat resistance of grain amaranth. SOD helped seedlings in keeping the stability of membrane proteins and increasing membrane thermotolerance during heat hardening
