Osmopholic yeast - flora of Greek honeys

The species of osmophilic yeasts, that were found in honeys of different districts of Greece (Sitia, Kalamata, Karditsa, Triadi, Chalkidiki and Xanthe) are following: Zygosaccharomyces rouxii, Candida apis and C. magnoliae. The average abundance of these species that were found in honey samples, which originate from Gossypium hirsutum, Erica verticillata, different plant species. Thymus capitatus, Helianthus annus and Pinus halepensis was 91.43% (Z. rouxii) 8.16% (C. apis) and 0.41% (C. magnoliae). Numbers of osmophilic yeasts per g of honey, originated from the above plants fluctuated from 11 (honey from G. hisutum), to 75 (honey from H. annuus). Osmophilic yeasts which there were in honeys that examined (production of 1991), did not induce honey fermentation, because humidity of honey samples were lower than 17.1%
