Content of carotenoid pigments and quality of hot pepper fruit after ethephon treatment at the stage of initial ripening were examined. It has been shown that ethephon accelerated maturation of the fruits and increased the percentage of red fruits in total yield. It was connected with increasing accumulation of red pigments in pepper fruit. Simultaneously wasn't noticed significant undesirable influence of ethephon on vitamin C, reducing sugars and crude protein concentrations in pepper fruit
