Share of fatty acids in intramuscular fat in musculus longissimus dorsi in free-living hoofed game (fallow deer, red deer, roe deer, wild boar)

Structure of fatty acids, unsaturatedness and nutritive value of intramuscular fat were studied in musculus longissimus dorsi of free-living hoofed game (fallow deer, red deer, roe deer, wild boar). The presence of 17 saturated acids of the order C8-C20, 9 of them saturated, 6 monoenic and 2 polyenic (essential), was observed. The palmitic acid C16:0 (23.541-25.767 %) was represented by the highest share and the caprylic acid C8:0 (0.031-0.195 %) by the lowest one. Many significant differences between species were observed in the content of the individual fatty acids, with the exception of capric acid C10:0. Nutritive value of fat was the lowest in roe deer (0.178) and highest in wild boar (0.332). Unsaturatedness of fat was markedly higher in wild boar compared with the other species (1.370 compared with 0.836-0.926-0.9130).
