Using micronized oak wood for accelerated maturing of wine distillates

In laboratorial conditions are studied the possibilities of accelerated aging of wine distillates by using micronized heat treated oak wood. The study is carried out in wood, sizes of the micro particles up to 160 mk. It is investigated the influence of three factors over maturing distillates - quantity of the micronized wood, temperature of aging and an alcoholic content of the distillates. As a measure of maturing distillates are used concentrates of dry extract, phenol substances, an wood wool and aromatic aldehydes. As degree indicators of utilizing the wood - the outputs of dry extract, phenol and wood wool substances.The micronized heat treated oak wood, in quantities 4 to 5 g/dm3 distillate ensures accelerated maturing of the distillates - as at normal temperature, as well under heat treatment of the distillates at temperature rates 45 C degree and 65 C degree. Under other equal conditions of aging, maximum result of applying micronized wood is obtained in distillates of 40 vol. alcoholic content.Ten times extraction of the micronized wood by wine distillate provides a high output of dry extract, phenol substances and an wood wool, that are criteria of a rational utilization of the wood at the process of maturing distillates.
